I like the shops here being closed Sundays, festivals, and (mostly) between c 2-5 pm.

It imparts a pattern to the day/week.

That said, it's a cultural thing, and it would not export well. In fact it's under pressure to change here too.

A +ve: it gives rise to periods where consuming is not all. It is part and parcel of quite a localist and home-cooking, anti-UPF, Spanish agenda.

UK beer tax is x 12.33 than Spain.

Why?

The EU sets minima. EU countries set their own alcohol excise rates.

Recipe for homemade horchata/orxata de chufa:

Needed:
- chufa
- water
- blender
- ideally, a nut bag for squidging all the orxata out.

1. If you're using a Vitamix or other high-power blender, no need to soak.

2. Otherwise, soak for 8 hours in filtered water... Image 2/n
3. 250 grams of chufas per 1 litre of water.

4. Blending the chufas in the blender until chufas somewhat broken up.

5. Add 500 ml of water and blend on high power for min. a minute.

6. Add a further 500 ml of water, and blend for at least 30 seconds.
