Brisket II

Dry rub with salt, pepper, garlic powder, lemon pepper, cumin, onion soup mix, dried onions, and brown sugar. Cover the meat on both sides with the dry rub and set it aside to marinate for an hour or more.

Make sure you have enough of the dry rub to use at later stages.

Sear the meat on both sides in oil.

In a pot or the same place you seared the meat, place two sliced onions and sauté them with a cup of balsamic vinegar and then add two chopped carrots.
Then add several cups of beef broth, add a half cup of bbq sauce and Worcestershire sauce. Add more brown sugar and onion soup mix and some of the leftover dry rub mix. Add a bit of brown sugar and dash of mustard. Pour this into a deep baking dish.

Spiced fish dish w/ Moroccan inspiration

Spice blend of sweet and spicy paprika, nutmeg, cinnamon, salt, sugar, chili flakes, cardamon, cumin, turmeric.

Marinate red snapper in some of the spices.

Time for mole sauce at #chezfrantzman
We began with skinless chicken legs in salt boiling water and set aside

We placed half a tomato, half an onion and three cloves of garlic on a hot pan or skillet (comal) until slightly charred.
We steeped the chilis (these are supposed to be chipotle, ancho, poblano, pasilla, guajillo, mulato) and then removed seeds and pulled them into pieces and briefly put them in the oven on broil.
Then in a mortar and pestle (molcajete) we ground almonds, star anise, cloves, cinnamon and sesame seeds.

Paella inspired dish at #chezfrantzman

We bought chicken drumsticks and thighs and tossed them in garlic, onion, paprika, olive oil, salt and saffron water and then fried them in oil and a bit of water until they were cooked through; then we set them aside. Image

Sea bass four ways

Four fillets sea bass pat dry and add salt and pepper.

Rub all with flour. Heat three pans. Add butter. fillet 1: skin side fried up, fillet 2 skin to pan. Flip after several minutes, set aside with dash of lemon and parsley. Image
Fillet 3: Fried skin side down in butter-garlic, then lightly coated with lemon, garlic butter on top and in the oven at 170 C for several minutes until cooked. Dash of lemon and parsley.
Fillet 4: Fish skin side down in butter-garlic dash of brandy and parsley. Then turn over for several minutes. Add parsley and lemon.

Poached eggs with asparagus and hollandaise sauce

We begin with the hollandaise prep: Four egg yolks beaten for several minutes; half a cup of butter, a tablespoon of lemon juice; salt and pepper. #chezfrantzman
For the asparagus, place four spears in a bit of water in a pan and turn on high heat or steam them; then after several minutes place them in another pan over medium heat with two shallots, crushed garlic, salt and pepper and butter. Saute them briefly and turn off the heat.
To make the hollandaise we place pot over a second pot to create a double boiler effect with a bit of water in the lower one on low heat. We beat the eggs so they don’t stick, adding melted butter slowly and lemon juice to make sure it doesn’t separate.

Beef slow cooked #ragu with homemade pasta and side salad

Step by step process:

Begin with 2lbs of beef, we used shank but many cuts will work, salt the beef and roughly cut into 2inch chunks.
We made two versions of this, one with red wine and one using beef stock; otherwise the ingredients were the same. We did the wine version in a dutch oven over low heat for 2.5 hours on the stovetop, the other we put in the oven for 2.5 hours at 350 F.
We seared the beef on medium heat with olive oil and salt, adding a bit of chopped red onion, garlic, dried thyme and bay leaf. As it browned and gave off its liquid we removed it; we poured in a half cup of red wine (or beef stock) then we added finely two large chopped carrots

We followed several recipes.

We bought four chicken breasts, cut them into large pieces and marinade with garlic and ginger paste; chopped green chili, yogurt, paprika (sweet), chili powder, garam masala and dried coriander Image

We chopped up carrot, zucchini, broccoli, sweet potato and added whole mushrooms for some tempura. We coated it and fried in batches in hot vegetable-sesame oil. Image

Triple dipped fried chicken with garlic-ginger sweat-spicy sauce #chezfrantzman

We begin with 1kg or more of chicken breast cut into strips. We dip them in a dry blend of 3 cups flour, salt, pepper, tblspn paprika and chicken seasoning (Philadelphia or similar will do); Image
2/ into a batter of 1 cup flour, 1 bottle of pale ale or similar beer, salt and pepper, two egg yolks; then dip them into the dry blend again and set aside.
Heat several liters of oil to 175 C approx. and fry for around five minutes (longer for large pieces) submerged. Set aside on paper towel. Do this in batches.

Food diary at #ChezFrantzman

Wanted to make "General Tso's" chicken and looked around for some ideas at 'Serious Eats' and 'Recipe Tin Eats'.

We began by buying four large chicken breasts and carving them up into approx 1 inch cubes. Image
2/We put this with 2 tbsp of soy sauce, 1 tbsp of hoisin sauce, chili flakes, 1 tbsp of sesame oil, 2 tbsp of cornstarch, 1 egg white beaten, 2 tbsp sherry, 2 tbsp Tito's vodka, a dash of baking soda, dash of salt, chopped garlic and chopped ginger, 2 tbsp rice vinegar.Set aside
We then made the dry dip/rub in a deep bowl; with 1.5 cup of cornstarch and 1/2 cup of flour, dash of baking powder and kosher salt.

We then take the chicken from the marinade by hand and put them in the dry rub until coated and placed on a plate;

Process; combine 1200 gr approx of Mutti or another tomato sauce or passata with one chopped tomato, fresh chopped coriander (or parsley), a tablespoon of sugar, juice of one quarter lemon, cumin, dried coriander, chopped basil…
2/6 cloves of chopped garlic. One diced red onion. 3/4 cup water from the tomato sauce container. Let it simmer for 20-30 min
3/In a large pan combine olive oil, a dozen thickly chopped mushrooms, half an eggplant (diced 1/2 inch cubes), parsley, 8 cloves of garlic, half a chopped onion, cumin, tablespoon of sugar and juice of half a lemon, half a cup of tomato sauce and water, olive oil.

Our version of Murgh Makhani at #chezfrantzman, with cashews and hot green pepper sprinkled on at end.

Process:

Sauce: Cut up 15 medium tomatoes and fry them with butter, 2 cracked cinnamon sticks, three bay leafs, 5 cardamon cloves, cinnamon, nutmeg, salt, dash of paprika
or Kashmiri chili powder. One sliced green chili without seeds. 12 cashews. Sliced ginger and chopped garlic. Cook down for 15 minutes covered. Then blend this and strain and return the liquid to the fire. Add Sliced up 10 garlic cloves and 2 inches of ginger crushed into a paste
Add this to the tomato sauce.

For the chicken marinade: Chicken breasts or chicken with bones, a whole lemon squeezed over the chicken, then salt dash, paprika or Kashmiri chili powder, place in fridge. 200-300 grams of yogurt, garlic/ginger paste, garam masala powder, salt

We are cooking #chili #chilipeppers at #chezfrantzman, we used beef chuck shoulder cut 🥩 and braised it with olive oil and salt and pepper and set aside. Then we added one onion and six garlic cloves and sautéed them; then we added a tablespoon of brown sugar
and several teaspoons of cumin, and added six 🌶 chili peppers that we had put dry into boiling water for half an hour and then blended with some of the water they were in; we added kidney beans and then the meat back in with one tomato chopped 🍅

We do a quick pan sear on our #rackoflamb and then we rub in olive oil, rosemary, garlic and bread crumbs that were previously combined, we sprinkle salt to taste and then we bake for 10 minutes covered and then 8 minutes uncovered #chezfrantzman #foodies ImageImageImage
